Dalmatia – gastronomic synaesthesia of senses

Given that Croatian gastronomy is diversified, it’ not surprising we have the best culinary recipes and specialities in this part of Europe. Mediterranean cuisine is one of the healthiest in the world, listed even as UNESCO intangible cultural heritage.

Fish, wine and olive oil are the “holy trinity” when it comes to Mediterranean diet. Sea food, fresh vegetables, aromatic plants and spices are a part of standard offer in traditional taverns (konoba) and other catering facilities at sea. Add to this meat specialities of Dalmatian hinterland, like lamb meat, sheep’s milk cheese and goat’s milk cheese, prosciutto… and continental side of Velebit and Lika do not fall behind as well, especially in terms of their traditionally prepared meals that include foods like potato, cabbage, dried meat, game meat or something else.
During the Belle Époque local distilleries supplied courts and metropolises with liquors, one of them being maraschino that is offered even today.

Pag cheese, Dalmatian prosciutto, salted sardines and marinated anchovies, risottos and fish stews are iconic meals of this cuisine, while barbecuing, grilling and baking under lid (peka) are common but masterful ways of preparing numerous delicious meals.
You can start your own gastronomic journey by visiting a local marketplace or fish market and enjoy a genuine synaesthesia of colours, flavours and scents. And yes, people here still pay a lot of attention to growing seasonal food only. Because of this season-changing dazzling synaesthesia of your senses, we are proud of having such cuisine, in many aspects regarded as one of the best in the world.
